  1. Place the filtered water into your high-speed blender and set aside.
  2. Wash and remove the pits from the Medjool dates. The dates are essential in this recipe as they prevent nut milk from separating and curdling in hot drinks, as most store-bought varieties do.
  3. Boil the kettle, and place the pitted dates and cashews in separate bowls. Pour boiling water over both and set a timer for 30 minutes.
  4. After 30 minutes, drain the cashews and the dates under cold water.
  5. Place the cashews, Medjool dates, and shredded coconut into your high-speed blender containing filtered water, blend on high for 2 minutes, or use the smoothie setting twice.
  6. Pour the mixture into your nut milk bag over a large bowl and squeeze it well.
  7. Grab another bowl, ideally with a spout, and filter the nut milk again through an ultra-fine mesh nylon strainer (see recommended product list below), and use a spoon to help push the nut milk through.
  8. Rinse out the nylon mesh strainer with filtered tap water between each use to remove the creamy-looking sediment. This sediment is very gritty, so we do this extra step. This is the key to smooth, creamy nut milk because nothing is worse than drinking homemade nut milk and getting grit stuck down your throat.
  9. Pour your finished nut milk into a clean glass jar and store it in the fridge for up to 5 days.

Notes

Nuts: You can use any favorite nut in this recipe. I love the combination of cashews and coconut; it is also my children's favorite.


Dates: You ideally want to use the dates in this recipe. The dates are vital for holding the milk together, and it creates such a lovely plant-based milk that does not curdle in hot drinks. Typically store-bought varieties that do not curdle in hot drinks are full of unwanted fillers and gums, but not this recipe!


Serving Size: This milk recipe is creamy, like a mix between whole milk and cream. I like to double the recipe when I make this and use 1/2 cup per serving because my family goes through a jug of this milk in 3 days. Because of how creamy and delicious this milk is, I like to use 50% of this milk with 50% water when I need extra for dishes like a bowl of cereal. You can, of course, use 100% of this milk instead if you like!
