One Pot Pasta
  1. Add all the sauces, pesto, water, and any optional add-ins to a large pot and bring to a boil.
  2. Add the dry, uncooked pasta to the pot and turn the heat to a simmer.
  3. Let the pasta cook covered until fully cooked, stirring the pot now and then, so the bottom does not burn.
  4. If adding in any cheese, mix in slices or freshly grated cheese at the end after the pasta has finished cooking.

Notes

Pasta: You can use any favorite pasta. I have made this recipe with all different shapes and sizes of pasta. As long as you keep it to 16 ounces, it will work.


Sauce: Depending on the pasta, the pasta might absorb some more of the sauce than other varieties. If the pasta ends up with more sauce than you would like after it is cooked, just let the pasta sit for 10-15 minutes with the lid on after cooking. Add hot water to the pot if the pasta has absorbed too much liquid. This is a very forgiving recipe.


Add-ins: If your family likes certain flavors, you can add additional ingredients to the pasta. For example, you can use some favorite spices.


Cheese: We sometimes like to add a few slices of cheese after the pasta has cooked and stir it into the pasta. Our go-to is cheddar cheese, but any good melty cheese will work. Try to avoid using pre-grated cheeses found in the dairy aisle. These cheeses have added ingredients that cause them to harden in sauces vs. remaining creamy.
