- Place all the dry ingredients into the bowl of your stand mixer fitted with the hook attachment and mix.
- Add in the remaining ingredients and mix on medium-low speed for 10 minutes until the glutens have developed and the dough is no longer sticking to the sides of the bowl. Depending on the humidity in the air on the day, the dough may stick very slightly around the bottom of the bowl. This is ok, too!
- With slightly damp hands, pick the dough up and place it into a lightly oiled bowl and also oil the top of the dough.
- Cover the dough with a clean tea towel and place it in a warmer spot in your home to double in size. This may take 1-2 hours, depending on the temperature in your home.
- Punch the dough down inside the bowl and leave it in there. Next, weigh small 68-gram pieces of dough and roll them into a tight, smooth ball. You don't need to do this on the countertop or add flour. The dough is straightforward to work with. You can roll them up easily in your hands and place them into the baking dishes as you work on them.
- Place 12 balls of dough evenly inside a 9x12 inch tall baking dish and do the same with the remaining 12 pieces in a second 9x12 inch dish.
- Let them rise again for 1-2 hours or until they have doubled in size.
- Preheat the oven to 350°F and then place the rolls in the middle rack for 25-30 minutes or until lightly golden brown on top.
- Melt 30 grams of unsalted butter in a small dish and place it to the side.
- When the rolls come out of the oven, brush them all with the butter and let them cool completely.
- The rolls will remain fresh in a covered dish at room temperature for up to a week.
Notes
Roll Sizes: This recipe makes decent-sized rolls. If you are looking for bread rolls that are half the size, like store-bought Hawaiian rolls, double the number of bread rolls from 24 by simply halving the weight of each roll when you roll them out. You may also need to decrease the bake time by 5 minutes.
