An Easy (and Delicious!) Vegan Pretzel Buns Recipe | That's Egg and Dairy Free

Ingredients

Instructions

Pretzel Bun Dough
  1. Place all ingredients into the bowl of your stand mixer fitted with the dough hook.
  2. Let the dough come together on medium speed, and then let it knead in the stand mixer for 10 minutes.
  3. Lift the dough out of the bowl momentarily and rub some olive oil around the bowl and the dough.
  4. Place the dough back into the bowl, cover it, and let it sit for 30 minutes or until it is doubled in size.
Shaping
  1. Punch the dough down and divide the dough into 15 equal pieces. You can do this by weighing the entire dough and dividing it by 15 or eyeballing them.
  2. Pinch the edges of the buns tightly towards the center and then close the seams.
  3. Place them seam-side down on a few parchment-lined baking sheets and let them rise again for 30 minutes, covereed lightly with a tea towel.
  4. Start preparing the water bath and get the oven preheated to 425°F.
Pretzel Bun Bath
  1. Place 1000 milliliters of water into a medium-sized pot along with the baking soda and the sugar.
  2. Let the water come to a boil, and then turn it down to a simmer.
  3. Place three pretzel buns into the simmering water for 30 seconds on each side.
  4. Transfer them one by one and place them seam side down onto a baking rack to drain.
Baking Time
  1. Place three or four pretzel buns on a baking sheet and score an X on the tops using a bread lame, sharp knife, or scissors.
  2. You can now, at this point, add any toppings you choose. I used coarse sea salt and sprinkled some on each of the buns. The surface of them gets slightly sticky from the water bath, so it is perfect for sprinkling on any toppings you can think of before baking. This step is optional.
  3. Bake the pretzel buns only on the middle rack of your oven for exactly 14 minutes. They will bake more evenly if you bake each tray separately this way.
  4. Place the buns on a few baking racks to cool completely before eating.

Notes

Shape: You can turn the pretzel buns into any desired shape. You do not have to be limited to making this recipe into buns. Try making them into traditional pretzels, hot dog buns, or braided rolls. Have fun experimenting!
