Baked Oats
  1. Preheat the oven to 350°F.
  2. Mix the bananas, eggs, vanilla bean paste, and milk
  3. Add in the oats and spices and mix well.
Assembly
  1. Spray the inside of 6 ramekins with non-stick spray or brush in some butter.
  2. Using a standard-size ice cream scoop, place one scoop of the oatmeal batter into the bottom of each ramekin.
  3. Add a 1/4 cup of frozen berries, and then top each ramekin with another scoop of the batter.
  4. Top each ramekin with another 1/4 cup of frozen berries and bake in the oven for 50 minutes.
  5. Serve warm or cold.

Notes

Milk Substitutions: You can use any milk for this recipe. Try almond or oat milk to make the recipe vegan.


Fruit: Any variety of frozen fruit will work in place of mixed berries, such as strawberries, blueberries, or even frozen mango.
