Chocolate Oat Pudding
  1. Wash and pit the dates and place them in a bowl of boiling water. Let them soak for 30 minutes and then drain.
  2. Put the milk, cacao powder, mashed bananas, oat flour, and drained dates into a blender and puree until smooth. If you have a small blender, divide the batch up before blending.
  3. Put the pudding into a medium-sized pot and cook over medium heat while stirring consistently.
  4. Cook the pudding until the mixture has thickened but is still somewhat pourable. This will take around 10-15 minutes.
  5. Spoon the pudding into ramekins and serve warm or refrigerate. They will set up more and have a better texture once cooled.

Notes

Cacao Powder: Make sure you are sourcing cacao powder for this recipe. Cacao powder is not the same as cocoa powder and has a lot of health benefits.


Mashed Bananas: If you don't want to use bananas, you can substitute them with 1/4 cup of maple syrup. Feel free to taste the batter after blending in the dates to see if you would like to add in the maple for added sweetness first. Raw oat flour is perfectly safe to consume before cooking.
