Comforting Chicken and Dumpling Soup Recipe | Dairy-Free & Delicious

Soup
  1. Place the olive oil, carrots, onion, celery, garlic, turmeric, ginger, salt, and pepper into a large, heavy-bottomed pot and sauté the vegetables on medium heat until they sizzle.
  2. Turn the heat down to medium-low and add in the sprigs of thyme and rosemary (with the stalks on, you will fish them out at the end), and put the lid on the pot to soften for 20 minutes.
  3. Add in all of the chicken broth and bring the pot to a boil.
  4. Turn the heat down to a gentle simmer and add in the swiss chard as well as all of the shredded rotisserie chicken.
  5. Place the lid back on and begin making your dumpling batter.
Dumplings
  1. Add all of the ingredients into a medium-sized bowl and mix well.
  2. Bring the soup back to a rolling boil and leave it boiling while you add in the dumplings
  3. Use a cookie scoop or a kitchen spoon to dollop the dumplings into the boiling soup. They will sink and then float to the top, but do not stir the soup until they have cooked through.
  4. If using a cookie scoop you will get 23 dumplings out of the batter, but there is no need to count unless you want to!
  5. Place the lid back on the pot and leave it at a rolling boil for 20 minutes, stirring every five minutes to ensure that the soup doesn’t burn on the bottom of the pot
  6. After 20 minutes the soup will appear thicker and creamy, and the dumplings will be cooked through. You can fish the thyme and rosemary stems out at this stage, or later as you serve up the soup.
  7. Turn the heat off and you are now ready to eat your delicious soup. Enjoy!

Notes

Sourdough Starters: You can swap the Swiss Chard for other greens, such as spinach.


Dumplings: The dumpling batter is listed in grams, as whenever I am developing a baking/batter recipe I prefer to use precise measurments each time.
