Chocolate Almond Granola
  1. Preheat the oven to 325°F.
  2. Line a baking sheet with parchment paper and set it aside.
  3. Mix the almond butter, olive oil, and maple syrup until thoroughly combined.
  4. In a large bowl, add the oats, whole almonds, chia seeds, and hemp hearts, and pour in the mixture from step 3. Mix well.
  5. Place the granola onto the baking sheet and pat it down firmly.
  6. Put it into the oven for 33 minutes.
  7. Take the granola out of the oven every 11 minutes. Stir and pat back down firmly.
  8. Once the granola has finished baking, sprinkle on the chocolate chips, and don't touch the granola until it cools to room temperature. You can speed the process up by placing the baking sheet into the fridge.
  9. When the granola is completely cool, take a fork and break the granola into clusters.
  10. Store in an airtight container for up to 6 months to a year.

Notes

Granola Clusters: The secret to achieving granola clusters is in the recipe and the method. Each time you take the granola out of the oven to toss it around, pack it back down firmly before it goes back into the oven. Once the granola comes out of the oven after 33 minutes, do not mix the granola at all. Instead, place any topping directly on top of the granola, such as chocolate chips, so they adhere, and let the entire thing cool completely while still on the baking sheet. It will harden as it cools, and you can break the granola into clusters.


Oven Temperature: Ensure your oven is calibrated correctly, so the granola does not burn. Oven thermometers are inexpensive and worth having on hand.
