The history of French crepes is as rich and diverse as the delicious treat itself. Originating from the northwest region of France, Brittany, crepes have been a beloved tradition for centuries. It is believed that the concept of crepes dates back to the 13th century when buckwheat was introduced to the region. Initially, crepes were made with buckwheat flour, and over time, wheat flour became more commonly used. Crepes soon became a staple of French cuisine, enjoyed in various forms from sweet to savory, and as a symbol of celebration during Candlemas, a Christian holiday. Today, French crepes continue to be celebrated and enjoyed around the world, captivating families with their versatility and delightful taste.

  1. Place all the ingredients into a food blender and give them a whirl until blended. You can do this with a whisk if you do not have a food blender.
  2. Use a 1/4 cup ladle or measuring cup to spoon the batter into a pre-heated nonstick pan.
  3. Swirl the batter around the pan immediately after pouring it into the skillet and continue cooking on medium heat until the surface has bubbles and is no longer glossy.
  4. Flip the crepe and cook the other side for around 10 seconds before placing it onto your cooked stack of crepes.

Notes

Flour: I love using einkorn flour for this recipe due to its many health benefits and flavor, but all-purpose or pastry flour will work great!
