Einkorn Chocolate Chip Sourdough Sandwich Bread Recipe | Healthy and Delicious

Ingredients

Levain (Start the night before)
The Main Dough (the next day)

Instructions

Levain
  1. The evening before you make your bread is when you will prep your levain. This thicker, more play dough-like levain creates an incredible bread.
  2. Add 30 grams of your Lievito Madre or other sourdough starter, like a 100% hydration starter. The difference in hydration will not make any significant difference to the recipe.
  3. Mix 50 grams of warmed filtered water to the sourdough starter until dissolved.
  4. Add 100 grams of bread flour and mix initially with a fork before kneading by hand. If sticky, dust it with more flour and knead until a smooth ball forms. You can watch my Instagram video here to see the consistency. It is the same consistency as my sourdough starter.
  5. Place it into a cleaned mason jar with a tight lid and let it rise somewhere cozy overnight. The lid needs to be tight with this type of levain!
The Main Dough
  1. Place the levain with all the remaining ingredients, even the chocolate chips, into the bowl of your stand mixer fitted with the dough hook. Mix the dough until everything has been thoroughly combined.
  2. This dough is sticky, so use damp hands, transfer the dough onto a floured work surface, and begin hand kneading and shaping the dough into a size to fit your loaf pan. I use the Caraway 1lb loaf pan. Do not be afraid to dust your hands with more einkorn flour to prevent the dough from sticking. Try not to use more than 1/4 cup of extra dusting flour, as you don't want too much incorporated into this recipe, but if you need a little more, that's ok.
  3. Place the smooth dough into your loaf pan and pat down the surface.
  4. Set it aside somewhere lovely and cozy to rise until it has doubled in size.
Baking Time
  1. Preheat your oven to 400°F, place your fully proofed bread directly into the oven, and shut the door. Immediately turn the oven down to 375°F and bake the bread for 40 minutes or until your desired golden color on top of the bread has been achieved.
  2. Let the bread rest for at least 2 hours or overnight before cutting and enjoying!

Notes

Einkorn Flour: You can use whole wheat einkorn flour or your fresh milled einkorn instead of all-purpose.
