  1. Place the four and salt into the bowl of your stand mixer fitted with the dough hook.
  2. Measure out the eggs, place them in a separate bowl with the olive oil, and whisk until thoroughly combined.
  3. Add the eggs to the mixer and knead the dough until it comes together with no more visible flour and forms around the dough hook.
  4. Take the dough out of the mixer and place it onto a lightly floured surface.
  5. Knead the dough around ten times with your hands until the surface is smooth.
  6. Cover the dough with plastic wrap and let it rest at room temperature for 30 minutes.
  7. Roll out the dough to your desired thickness using a rolling pin or a pasta machine and cut it into desired shapes.
  8. You can use this dough to make ravioli, spaghetti, or any pasta shape.
  9. Boil fresh pasta for 3-5 minutes or until it floats to the top of the water.
  10. Leftover pasta can be stored in the fridge for a week or in an airtight container in the freezer for up to 3 months.

Einkorn Flour: You only need to use einkorn flour if you can acquire some to make this recipe. You can try using a favorite flour or one you have on hand. I like einkorn flour due to its many health benefits and nutritional profile.


Eggs: When making pasta, it is best to measure the eggs. Add an egg to compensate if you cannot and your pasta seems dry. If it feels too wet, add a tablespoon of flour at a time.
