Apple Spiced Sweet Delicious Cardamom Bun Recipe | A Twist On Swedish Tradition

Instructions

Dough
  1. Place the yeast, water, and 10g of sugar into the bowl of your stand mixer. Let it sit for ten minutes or until doubled in size.
  2. Add the melted butter, eggs, whole milk, and the rest of the sugar, followed by the flour.
  3. Using the dough hook, knead the dough for ten minutes on low-medium speed. The dough will become slightly sticky and stick to the sides of the bowl. This is normal.
  4. Oil your hands and scrape up the dough from the bowl. Slightly oil the sides and bottom of the bowl, put the dough back in, and let it rise covered for one hour.
  5. Keep the dough in the bowl and place it into to fridge to ferment slowly over the next 12 hours.
Filling
  1. After your dough has rested in the fridge for 12 hours, it is time to make the filling.
  2. Place the ingredients into a bowl, mix to a paste, and set aside.
  3. Peel, core, and slice your apples into 1/2-inch thick rings and place them in a bowl of cold water, so they don't brown.
Egg Wash
  1. Put the milk and egg into a small bowl and mix well. Set aside.
Assembly
  1. Preheat the oven to 375°F.
  2. Place the dough onto a floured surface and roll it to a 24-inch by 14-inch rectangle.
  3. Spread all the fillings over the dough, leaving a 1/2-inch border around the edges.
  4. Take the shorter edge and fold it in half over the dough.
  5. Roll the dough out again, but this time to an 18-inch by 13-inch rectangle.
  6. Slice the dough into 26 13-inch long strips that are roughly 1/2-inch wide.
  7. Wrap two strips of dough around each apple ring like you would when making a pompom, and tuck in any loose ends. Try not to be too neat about this step, as these look great rustic.
  8. Place them on a baking sheet 2 inches apart, brush with the egg wash, and sprinkle on coarse sugar if desired.
  9. Bake in the oven for 20 minutes.
  10. Serve warm.

Notes

Flour Substitutions: I use European flour in my cooking and baking. I find it easier to work with; the flavor is better and easier on the stomach.


Butter: Salted European butter works best in this recipe. European butter melts slower, resulting in a better dough as these rolls bake.


Apples: You can use any favorite apple for this recipe. I prefer Granny Smith apples due to their delicious tartness that balances out the sweetness and spice in these rolls.
