Instructions

Vanilla Beans
  1. Preheat your oven to 170°F.
  2. Rinse your vanilla beans under cold water and dry them thoroughly. This step is optional.
  3. Place each vanilla bean onto a parchment-lined baking sheet.
  4. Bake the vanilla beans for 2 hours, flipping them once every 30 minutes. If any of the vanilla beans still feel moist and won't snap easily, let them dry in the oven a bit longer.
  5. Once dried, let the vanilla beans cool entirely.
  6. Place the dried and cooled vanilla beans into a spice grinder and grind them as finely as possible.
  7. Mix the vanilla bean powder with sugar and store it in airtight containers.

Notes

Vanilla Beans: You can use a favorite type of vanilla beans for your sugar; it does not have to be Madagascar vanilla beans.

Drying the Vanilla Beans: Vanilla beans have different thicknesses and lengths; for this reason, some may take longer than 2 hours, and some may take less. Test for doneness every 30 minutes when you go to flip them. If they snap easily, they are ready.

Usage: If you plan on using vanilla sugar for baking, you don't need to worry about grinding your vanilla beans to a super fine consistency. Some herb grinders are harder to achieve, such a fine grind. If you plan on also using the sugar for warm drinks, like coffee or tea, sift your ground vanilla beans through a fine sieve and keep any larger pieces of ground vanilla in a different storage container to add to your baking.
