  1. Preheat the oven to 350°F
  2. Place the light brown sugar, cane sugar, salted butter, eggs, agave syrup, and melted and slightly cooled semisweet chocolate chips into the bowl of a stand mixer fitted with a paddle attachment. Mix on medium speed for three minutes.
  3. Place the flour, cornstarch, cream of tartar, baking powder, and baking soda into a bowl, mix to combine, and add into the bowl of your stand mixer.
  4. Mix everything until everything is incorporated, and then fold in all of the chocolate chip add-ins.
  5. Dampen your hands with water ever so slightly and then take two tablespoons of dough per cookie and roll them out into smooth and round balls.
  6. Place each cookie 2 inches apart on a parchment-lined cookie sheet and bake on the middle rack of your oven for 15 minutes.
  7. Remove the cookies from the oven, place them onto a cookie rack, and let them cool completely before storing them in an airtight container.

Notes

Flour Substitutions: I use European flour in my cooking and baking. I find it easier to work with; the flavor is better and easier on the stomach.


Cornstarch: You can safely replace cornstarch with arrowroot.


Butter: Salted European butter works best in this recipe. European butter melts slower, resulting in a better dough as these rolls bake.
